Rhubarb!

Last week I thought about rhubarb everyday...obsessive much? All the food blogs I read had rhubarb popping up in their posts, and I couldn't wait to get my hands on some. It's a pretty amazing thing...so tart and puckering on it's own and then it gets magically transformed when you add some sweetness. It's like the grumpy person that is softened but the sweet, gurgly baby.
To my great delight I found rhubarb at the farmer's market this weekend...the last bag...don't you just love it when the stars align?The bag sat in the fridge until today when I finally decided on what I wanted to do with it. I cooked it with some lemon juice, honey, and vanilla bean, just until the rhubarb softened.I'm thinking this compote will taste delicious on oatmeal...
Best of all I have secured at least one more bag of rhubarb for next week! Hmm, crisp, crumble, pie??? The options are limitless!
