To my great delight I found rhubarb at the farmer's market this weekend...the last bag...don't you just love it when the stars align?
The bag sat in the fridge until today when I finally decided on what I wanted to do with it. I cooked it with some lemon juice, honey, and vanilla bean, just until the rhubarb softened.
I'm thinking this compote will taste delicious on oatmeal...
Best of all I have secured at least one more bag of rhubarb for next week! Hmm, crisp, crumble, pie??? The options are limitless!
